GRAPES:
Sauvignon Blanc with a small percentage of Chardonnay.
YIELD:
80 quintals/hectare, obtained by "short" trimming and grapes selection.
IN THE VINEYARD:
The West facing exposure, the position at the half of the slope and the area naturally faced to the cold flow of air as well as the early harvest, guarantee the freshness of this wine.
WINEMAKING AND AGING: Soft pressing of the grapes and alcoholic fermentation in stainless steel containers. On the fine lees for abt 6 months keeping the temperature around (10 – 12°C). The wine assembly is complited by a small amount of Chardonnay aged in barrique

A very fresh and delicate version of Sauvignon Blanc.
To be served at 8 – 10°C.
It can be a lovely match with fish, white meats and fresh cheese.
Perfect as an appetizer.
